This recipe uses sella basmati rice, a rich tomato and pepper mix, and well-seasoned beef to create a plate of jollof that is flavourful, fluffy and packed with that unmistakable Nigerian party-jollof goodness. Add some golden fried plantain on the side and you have a meal that needs very little introduction.

Ingredients
For the Beef
600 g beef
½ teaspoon salt
Handful sliced onion
½ teaspoon curry powder
1 bouillon cube
Few sprigs thyme
½ to 1 cup water
For the Pepper Mix
300 g tomatoes, about 3 to 4 Roma tomatoes
250 g red bell peppers, about 2 medium peppers
1 Scotch bonnet, seeds removed, or skip it for less heat
½ red onion
½ garlic bulb, optional
Few sprigs fresh thyme
Oil, for drizzling
For the Rice
¼ cup oil
1 medium onion, chopped
3 cups sella basmati rice, about 600 g
6 oz tomato paste, about 165 g
¾ cup reduced pepper mix, about 200 g
1¼ teaspoons salt
½ teaspoon crushed bouillon cube
1 teaspoon dried thyme
1 bay leaf
1 teaspoon curry powder
1 cup chicken or beef stock
