Telande World just showed us a different way to prepare a vegan-esque burger with Nigerian staple , plantain.

Ingredients

  • 300ml vegetable oil, for plantain
  • 2 tbsp vegetable oil , for frying frittata
  • 2 medium fingers ripe plantain
  • 4 large eggs
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 clove of garlic, minced
  • 1 medium green bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 4 medium Burger bun
  • 5 tbsp Mayonnaise
  • 1 bundle of Lettuce
  • 4 burger cheddar cheese slices
  • 1 large tomato, slice

Directions

  1. Heat vegetable oil in a pan over medium heat and carefully drop the slice plantain and fry until golden for 7-10 minutes. Take out and set aside to cool
  2. Add the salt, black pepper, garlic into the eggs and whisk together
  3. Heat vegetable oil in a frying pan and pour the eggs into it, add the fried plantain then the sliced bell peppers
  4. Cover and let simmer on low heat for 5-7 minutes and cooked through
  5. Take of heat and cut out with a cutter into buns size circles and set aside
  6. Cut the buns into half then spread with the mayonnaise
  7. Place the lettuce on followed by the cut out frittata, cheddar cheese slice, tomato slice and the other half of the bun
  8. Plantain frittata burger ready to be served
